Chicken salad

Having a chicken salad just for dinner or having this great chicken salad stuffed into a sandwich just makes a wonderful treat for the taste buds and it is also filling. I tried it out with some chilly flakes (I am into some spicy food these days) made me want for some more, but i have become more diet conscious.

Ingredients:

½ cup mayonnaise
½ cup salad dressing
½ cup yogurt
½ cup sour cream
1 tablespoon fresh dill
1 tablespoon fresh thyme
1 tablespoon fresh tarragon
1 tablespoon fresh chives
1 cup cook cubed chicken
1 cup cooks Cubed turkey
1 cup celery1 cup carat
¼ cup golden raisins
¼ cup raisins
cup dried cranberries
cup dried cherries
cup apple cubed
½ cup grapes

1. In a lage bowl mix together everything
2. Refrigerate for at least one hour to allow flavors to blend.

Murg Makhni

BUTTER CHICKEN

French cuisine has a large following that keeps it's secrets alive. Indian cuisine on the other hand is a combination of spices and essence of the ingredients that go into the preperation that makes it stand out among the rest of the gourmet experience.
I wanted to make a dish that i was so fascinated with it's taste that i had tried several times to get deep and understand the flavors that makes the difference. Finally yesterday my pallet could not resist the crave for this wonderful dish, and finally i decided to go ahead and do what my sensable pallet wanted.

  • Cut the chicken into bite size pieces
  • Apply ginger garlic paste, chilli powder, coriender powder and salt
  • Heat a pan with 3 TB of oil and sear these chicken pieces
  • Remove them set aside.
  • In the same pan add cumin seeds, onions and ginger garlic paste and add little water just to release the fond.
  • Put corriender powder, blanced almonds, red chilli powder, fenugreek powder.
  • Once it is a little done, add diced tomatos.
  • Cook until the tomatos are done.
  • Puree this mixture to a fine paste.
  • Now in the pan add butter with the juices from the chicken.
  • Add the puree to the pan, then add the chicken to the sauce.
  • Add salt and add little tomato ketchup to get the tangyness.
  • Once it comes to a boil add cream.
  • Finally add garam masala (Already posted)
  • Let it simmer for another 5 minutes

My treat to the family






This was one of those wonderful days, when i decided on expeimenting on my family the culinary skills that i had learned at college. It had my family go wow! looking at the techniques that i had learned. I had preheated the oven to 400 degrees F and then bought it down to 350 degrees F. I had my mirepoix cut into equal sizes. The chicken was cleaned with a tissue paper to avoid any moisture and then i used salt and pepper to season the exterior and also the interior of the chicken. Salt is good for giving the chicken its golden brown color in the oven. I gave it about 40 minutes in the oven as it is a lot simpler to calculate the time in the oven by giving 20 minutes for every pound of chicken. The residue on the pan was deglazed with red wine and it was added to the sauce. It was a wonder experience. I am planning on doing beef stew which i will be blogging on soon.
